  1. I tried this recipe and found it difficult to fold the whipped egg whites into the rather thick batter. The apricots sank and the result was a dense cake. Still yummy, but I can’t imagine this recipe yields the pictures results.

  2. We went to the farmers market on Saturday and saw the lovely farm fresh Okanagan apricots so couldn’t resist buying a bunch. Brought back memories for my Austrian fella of his Mom’s Austrian Apricot cake so a recipe was needed pronto! Made your cake yesterday and everyone LOVED it!!! Does it double well? More cake needed!
